In a large mixing bowl, add jiffy corn muffin mix, sour cream, melted butter, and both cans of corn (whole kernel corn should be drained). Stir to combin.
Mix in shredded cheese.
Pour mixture in 8X8 casserole dish and bake for 40 minutes.
Notes
If after the 40 minute cook time the center is still quite jiggly, cook for another 10 minutes, or until it is set.
Diced chilies or jalapenos make a nice addition for added spice.
Add cooked ground beef to the mixture before baking for a main dish.
