Chicken Stuffed Air Fryer Jalapeno Poppers

This recipe is made healthier by reducing the amount of cheese and bacon used and adding chicken breast to the cream cheese filling.

Ingredients
  

  • 1 lb chicken breast
  • 4 pieces thick cut bacon
  • 10 large jalapeno peppers
  • 4 oz cream cheese at room temp
  • 1/2 cup shredded cheddar cheese
  • salt and pepper to taste

Instructions
 

  • Start by cooking bacon in skillet or air fryer until crispy brown. Remove from grease, allow to cool, and crumble.
  • Season (salt and pepper, or whatever BBQ seasoning blend you like) and cook your chicken breasts in skillet with bacon grease or in air fryer.
    You can dice and cook in small pieces or cook whole breast and then cut into small pieces - whichever you prefer.
  • Wash jalapeno peppers. Remove stems and cut in half long ways so that you are left with two pieces. Rinse under cool water to remove seeds.
  • In a medium bowl, combine cream cheese, shredded cheese, crumbled bacon and cooked chicken pieces and mix.
  • Fill each jalapeno slice with a scoop of the cream cheese filling.
  • Cook in single layer in air fryer basket on 400 degrees for 5 minutes. Cheese should be nice and bubbly.

Notes

  1. Don't overcook chicken when initially cooking. It will go back in the air fryer once it is stuffed in the peppers, so if you overcook initially, you will end up with chewy chicken. 
  2. If you don't have an air fryer, just follow the steps for cooking bacon and chicken in a skillet and then bake the poppers in a 400 degree oven for 8 minutes, or until the top is starting to turn golden brown.
  3. You can also sub jalapeno peppers with mini sweet peppers or poblano peppers.
