These homemade chocolate chip pancakes are thick and fluffy. Make a batch for a comforting breakfast now or store them in the freezer for an easy breakfast.

My kids absolutely love when we have homemade pancakes for breakfast. But I don’t always love making them on a busy morning.

Which is why I absolutely love this easy pancake recipe. It is simple to double or triple for batch cooking. Then store delicious from scratch pancakes in the freezer for an easy breakfast!

And with the chocolate chips in the batter, my kids usually don’t even ask for syrup. Which makes these pancakes perfect for an on-the-go breakfast.

Ingredients for Chocolate Chip Pancakes

  • All purpose flour
  • granulated sugar
  • baking powder
  • baking soda
  • milk
  • egg
  • salted butter
  • mini chocolate chips
  • vanilla (optional)

Making Homemade Chocolate Chip Pancakes

Making these pancakes couldn’t be easier!

Start by melting your butter and allowing it to cool slightly.

Sift together your dry ingredients – flour, sugar, baking powder and soda. Add in milk, cooled butter, vanilla (optional). Whisk an egg and then add to the mixture as well.

Stir ingredients together to create a thick, slightly lumpy batter. Fold in your chocolate chips until distributed throughout the batter.

Heat a skillet or griddle over low/medium heat. Put a little butter in the skillet to keep pancakes from sticking and to give them a nice golden color.

Ladle out 1/4 cup of batter at a time. Cook until top side starts to bubble and pancakes lift from cook surface easily (usually 1-2 minutes per side). Flip and cook other side.

Serve warm with or without syrup! Store leftovers in an airtight container in the fridge or freeze for later.

How to Freeze Homemade Pancakes

After cooking your pancakes, allow them to cool slightly. Line a baking sheet with parchment paper and place the pancakes in a single layer. Place the baking sheet in the freezer for about an hour. Doing this step should prevent the pancakes from sticking together. Remove the pancakes from the baking sheet, and transfer to a freezer safe bag.

If properly store, pancakes should last a couple of months in the freezer!

How to Reheat Frozen Pancakes

Simply remove the desired number of pancakes from the freezer and place on a microwave safe plate. The amount of time to microwave will depend on the wattage of your microwave, but I recommend starting at:

  • 1 minute for a stack of 2 pancakes
  • 1 minute 30 seconds for 3 pancakes
  • Heat for an additional 30 seconds if needed

Servings: 12 pancakes

Ingredients

  • 2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 3/4 cup milk
  • 1 large egg
  • 1/4 cup salted butter melted
  • 1 tsp vanilla optional
  • 1/2 cup mini chocolate chips

Instructions

  • Sift flour, sugar, baking powder and baking soda together in a large mixing bowl.
  • Pour in milk, slightly cooled melted butter, and vanilla. Whisk egg and add to mixture.
  • Stir to combine all ingredients. Batter will be slightly lumpy. (see notes)
  • Fold in chocolate chips.
  • Preheat your skillet or griddle over low/medium heat with a little butter melted in it (add little bits of butter in between each batch of pancakes). Use a 1/4 cup measuring cup to measure out batter onto the cook surface.
  • When bubbles appear on the top side of the pancake, and it easily lifts from the skillet, flip and cook on the other side.
  • Can top with honey, syrup, or just enjoy as is.

Notes

Pancake batter should be thick, but if it is too thick to pour from the measuring cup, add little bits of milk until desired consistency is reached.
Freezing Pancakes
Allow pancakes to cool. Line a baking sheet with parchment paper and place pancakes in a single layer. Put in freezer for about an hour. Remove from baking sheet and place in a freezer safe bag. 
To reheat, place 2-3 pancakes on a freezer safe plate. Microwave for 1 minute and then check to see if thawed and warm. Add 30 seconds until warmed through.
