I don’t know about you, but I haven’t always loved baked oats. In fact, after the first time I made them, I decided I didn’t like them and gave up on trying them for a couple of years. 

But after falling in love with overnight oats, I decided to give baked oatmeal another chance. And I am so glad I did! 

This simple oats recipe is a hit with my entire family. It gets the same reaction as chocolate cake around here because of it’s rich brownie taste. I can make up a pan of it at the beginning of the week, and it’s ready to enjoy. My kids love to have their brownie oatmeal with a big glass of milk, while I like to have it alongside a cup of coffee.

It’s the perfect way to satisfy that sweet tooth, while still using better for you, simple ingredients! So here’s how to make a delicious pan of baked chocolate oatmeal.

Ingredients for Double Chocolate Baked Oats

  • Oats – I have made this recipe with both quick oats and old fashioned oats. Both work fine but yield a slightly different texture. Personally, I prefer old-fashioned oats because of the large size.
  • Milk of Choice – You can use regular milk or non-dairy milk in this recipe. Almond milk, soy milk, and oat milk all work well.
  • Peanut Butter – This recipe doesn’t have a strong chocolate peanut butter taste, but it does have a slight hint of peanut butter. You can exchange it for another nut butter, like almond butter or cashew butter if you choose. 
  • Pure Maple Syrup – Adds a nice touch of maple syrup flavor to the “brownies” and is the perfect, natural sweetener for this recipe. 
  • Cacoa powder or unsweetened cocoa powder – this is what is going to give your bake the rich chocolate flavor, so choose a good quality powder. Personally, I prefer cacoa powder over cocoa powder due to it’s slight health benefits, even if it is a little more bitter.
  • Egg – though I’ve not tried it out, I believe a flax egg could be substituted if needed for dietary purpose. If you try it, let me know!
  • Chocolate Chips – Milk chocolate or dark chocolate chips are both delicious in this recipe. 
  • Vanilla extract

How to Make Baked Chocolate Oatmeal

To start, preheat your oven to 350 degrees and grease the bottom of an 8X8 baking dish with butter or oil. 

In a large bowl, combine your wet ingredients. Start by adding the egg and whisking it, then whisk in the milk, maple syrup, vanilla extract, peanut and peanut butter.  Don’t worry if the peanut butter doesn’t break up completely – it will melt while baking. 

Now add in the rest of the ingredients. Dry oats, cacoa powder, and chocolate chips. Pour into your prepared baking dish.

You can top with some extra chocolate chips if you choose. This is double chocolate recipe afterall… Bake for 30-35 minutes.

If you want the oatmeal to hold together better in a piece, you’ll need to let it cool completely. But if you don’t mind scooping it up with a spoon to enjoy, you can just let it cool slightly and then enjoy while still warm. 

Store your leftovers in an airtight container in the fridge. You can reheat in the microwave for 30 seconds or so.

Baked Chocolate Oatmeal Brownies

Ingredients

  • 1 large egg
  • 2 cups milk of choice
  • 1/2 cup maple syrup
  • 1/4 cup peanut butter
  • 1 tsp vanilla extract
  • 2 cups oats old-fashioned or quick both work
  • 1/4 cup cacoa powder or unsweetened cocoa powder
  • 1/2 cup chocolate chips milk chocolate, dark chocolate, or personal preference
  • pinch salt

Instructions

  • Pre heat oven to 350 degrees. Grease 8X8 baking dish with butter or oil.
  • In a large bowl, add egg and whisk. Add in remaining wet ingredients -milk, maple syrup, peanut butter and vanilla extract. Whisk all together.
  • Add in your oats, cocoa powder, chocolate chips, and a pinch of salt.
  • Pour oat brownie batter in prepared dish.
  • Bake 30-35 minutes. Allow to cool before cutting for more formed baked oatmeal or eat with a spoon while still warm.
