These oatmeal brownies make a perfect healthy breakfast or delicious snack. The baked oatmeal has a delicious fudgy brownie flavor, but made with healthier ingredients.
Eating healthier is a journey that my family has been on (imperfectly) for years. We desire to eat whole, unprocessed foods that nourish our bodies. It can be a challenge to swap out all of the foods you’ve been raised eating and sometimes it can feel like you have to give up all the flavors you enjoy.
That’s why I enjoy making healthier versions of foods we like.
This great recipe that I am about to share is a healthier brownie option. It has the flavor of actual brownies with a hint of peanut butter, goes so good with a cup of coffee, and satisfies my sweet tooth.
Best of all, it doesn’t have tons and tons of refined sugar, and can easily be adjusted to fit different dietary restrictions. It has become one of my favorite ways to prepare baked oatmeal!

Ingredients

- 2 cups milk of choice
- 1/4 cup peanut butter
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1 egg
- 2 cups oats of choice – I use quick oats
- 1/4 Cup unsweetened cocoa powder
- 1/2 cup naturally sweetened chocolate chips
- 1 tsp Baking Powder
- Pinch of salt
How to Make Chocolate Oatmeal Brownies
The first thing you need to do is pre heat oven to 350 degrees.
Then, in a large bowl combine your milk of choice, maple syrup, vanilla, and peanut butter. Whisk to combine. Once these 4 ingredients are well combined, whisk your egg in.
Now you want to add your dry ingredients to the wet ingredients.
Add in your oats, cocoa powder, baking powder, and a pinch of salt. Stir to combine. Once well combined, mix in the chocolate chips.
Grease your baking dish with a little coconut oil. I use a 7X11 dish. Pour your oat mixture in the dish and cook for about 35-40 minutes.
Once you remove from the oven, allow the baked oats to cool slightly before cutting. This allows the oatmeal to set, and you can then cut in to “brownie” pieces.
Store your leftovers in an airtight container in the fridge.
Notes
For Gluten-Free Chocolate Oatmeal Brownies
To make your oatmeal brownies gluten free, you will need to check the package for certified gluten free oats. While oats are naturally gluten free, sometimes they may be processed in a facility that also processes non-gluten free grains – so you will need to check your packages.
Bobs Red Mill makes a gluten free quick oat that you can find here.
Whole oats will also work with this recipe.
Chocolate Chips
I use Lily’s semi-sweet no sugar added baking chips.
You can exchange the semi-sweet chocolate chips for milk or dark chocolate chips if you prefer.
Lily’s makes both of those in a no sugar added option.
For Vegan Chocolate Oatmeal Brownies – Egg Substitute
To make your oatmeal brownies vegan, you can swap the egg for a flax egg. To do this, you mix 1 tbsp of flax seeds with 3 tbsp of water. Mix it together and let it sit in your fridge for about 15 minutes.
Milk Substitutes
Oat milk, coconut milk, and almond milk should work fine with this recipe, although I have not personally tried them. If you do try, let me know down below.
Protein Powder
If you want, you can add a scoop of chocolate protein powder of choice to the brownie batter mixture.
