You can make these muffins in one bowl – or you can break out the hand mixer if you choose. Either way, these muffins are a family favorite treat!

These muffins also freeze wonderfully. So double or triple the recipe for a simple breakfast.

Ingredients for Blueberry Muffins

  • All purpose flour
  • Sugar
  • Baking Powder
  • Salted Butter (or unsalted, plus a little salt)
  • Egg
  • Milk
  • Fresh or Frozen Blueberries

How to Make Homemade Muffins without a Mixer

If you don’t want to take the time to cream your sugar and butter together (or maybe you don’t want to make a bunch of noise early in the morning because everyone is sleeping in), I have had good success with just melting my butter and adding it to the other ingredients!

To follow this method, whisk together you flour, sugar, and baking powder in a large bowl.

Add in melted butter, your milk, and a beaten egg. Stir until flour is incorporated and no streaks remain.

Then you just fold in your blueberries. Line a muffin tin with liners. Bake in 400 degree oven for 20-25 minutes.

To Cream Butter and Sugar Together

If you prefer to cream you butter and sugar together using a hand mixer or stand mixer, follow these steps.

Whisk together flour and baking powder in a separate bowl.

To a separate bowl, or stand mixer bowl, add softened butter and sugar. Beat for about 2 minutes, or until creamy. Add in egg and continue to beat until incorporated.

Alternate adding in flour mixture with milk, mixing until combined.

Gently fold in blueberries by hand. Follow above directions for baking.

Freezing Homemade Blueberry Muffins

To freeze, simply allow baked muffins to cool to room temperature. Place in freezer safe bag or container for up to 3 months.

Thaw on the counter for 3 or so hours, or microwave for 30 seconds.

Old Fashioned Blueberry Muffins

An easy-to-follow recipe for homemade blueberry muffins, using basic baking ingredients and only one bowl.
Servings: 12 muffins

Equipment

  • 1 12 count muffin tin
  • muffin liners

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup butter, salted see notes for alternative method
  • blueberries, fresh or frozen at least 1 cup, but can use more

Instructions

  • Preheat oven to 400 degrees.

To make blueberry muffins without a mixer:

  • Start by whisking together flour, baking powder, and sugar in a large bowl.
  • Melt butter and add to dry ingredients. Add in milk and beaten egg. (If batter is too thick to stir, add little splashes of milk).
  • Stir all ingredients until combined and fold in blueberries.
  • Line 12 count muffin tin with muffin liners. Spoon in batter. Bake for 20-25 minutes.

Notes

Butter – You can replace melted butter with softened butter if you want to use a hand or stand mixer to cream the butter and sugar together. To do this:
Whisk flour and baking powder together in a bowl.
Beat sugar and softened butter for about 2 minutes. Add egg, continue to beat until incorprated well.
Alternate adding in flour mixture and milk until all combined.
Fold in blueberries. 
 
*If you only have unsalted butter, add in 1/2 teaspoon of salt.*
