This easy corn casserole recipe makes the perfect side dish for thanksgiving dinner, or really any time of year! This tasty side dish only uses 6 simple ingredients and is sure to be a new family favorite!

This easy recipe for corn casserole is one of my favorite side dishes to see on the holiday table. It is also incredibly easy to make up for a weeknight meal and my kids devour it every single time.

Ingredients for Corn Casserole

  • 1 box of jiffy corn muffin mix
  • 8 oz sour cream, low fat is fine
  • 1 can cream style corn
  • 1 can of whole kernel corn
  • 1 stick butter
  • 1 cup shredded cheddar cheese
  • green chilies (optional)

Cooking Corn Casserole

First you will need to melt your stick of butter and drain your can of whole kernel corn.

Next, in a large mixing bowl combine your box of jiffy mix, both cans of corn, sour cream, and melted butter. If adding chilies, add those at this time as well. Stir to combine.

Mix in the shredded cheddar cheese. Pour the mixture in a casserole dish. I use a 7X11 dish, but an 8X8 will also work fine.

Bake in a 350 degree over for 40 minutes. You can check to see if the casserole is cooked all the way through by slightly shaking the dish. If the center is still very jiggly, you will need to cook it for a little bit longer (about 10 minutes) until it sets.

Once cooled to room temperature, store your leftovers in an airtight container in the fridge.

Side Note About Jiffy:

If you’ve never used jiffy cornbread mix, you should know that it is sweet. I think it works really well with the cheddar cheese and sweet corn and makes for a delicious side dish.

But, if sweet corn bread isn’t your thing, feel free to sub out your preferred mix.

Jiffy Corn Casserole with Ground Beef

Try adding a 1/2 to 1 pound of cooked ground beef to your corn casserole mixture. Just season meat with salt and pepper, brown and drain the fat off. Stir into the mixture before the cheese is added.

Double it!

This recipe also doubles well. You will need a larger baking dish size (9X13) and your cooking time will need to adjust.

Ingredients

  • 15 oz can cream style corn
  • 15 oz can whole kernel corn drained
  • 8 oz sour cream
  • 1 stick melted butter 1/2 cup
  • 1 box Jiffy corn muffin mix
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350 degrees
  • In a large mixing bowl, add jiffy corn muffin mix, sour cream, melted butter, and both cans of corn (whole kernel corn should be drained). Stir to combin.
  • Mix in shredded cheese.
  • Pour mixture in 8X8 casserole dish and bake for 40 minutes.

Notes

  1. If after the 40 minute cook time the center is still quite jiggly, cook for another 10 minutes, or until it is set.
  2. Diced chilies or jalapenos make a nice addition for added spice.
  3. Add cooked ground beef to the mixture before baking for a main dish.
