In a small saucepan, over medium heat, combine water, sugar of choice, pumpkin, and pumpkin pie spice. Stir/whisk the mixture continuously.

Once it starts to boil, reduce the heat to low to allow the mixture to continue to simmer while your sugar dissolves.

Add in your vanilla extract and simmer for another 3 minutes to allow the alcohol flavor to cook out of the extract.

Remove from heat and let the syrup cool.

Using a fine mesh strainer, pour the mixture through the strainer into a glass jar.

You may need to dump the pumpkin puree out of the strainer to allow the pumpkin sauce to flow through easily. I like to strain my syrup twice.

(I hold on to this cooked pumpkin puree and mix it with some of the leftover puree in the can. My kids call it pumpkin applesauce and love it!)

This syrup is a thinner consistency, meant for adding to your favorite coffee drinks. I would not recommend using this specific recipe on pancakes as it’s quite watery. You could increase the sugar content however to create a thicker syrup.
