Breakfast has always been the struggle meal in our house. I don’t particularly like cooking first thing in the morning, and my kids have a very limited preference for breakfast items. They would prefer sugary pancakes every morning; I want to serve them something nutrient packed.
This means I’ve spent a lot of time testing out new recipes for breakfast. And when I find a recipe that works, I cling to it. I’ll serve it on repeat with small changes to fit the seasons.

Tips to Simplify Breakfast Time
One of my favorite ways to simplify breakfast is to make a few of these recipes ahead of time. The egg muffins store beautifully in the fridge for up to 5 days and can be reheated in the microwave in under a minute.
The pumpkin pancakes freeze great! I line them on a baking sheet and place them in the freezer. Once frozen, I’ll put in a Ziploc bag. They can be reheated for a quick breakfast. The Dutch baby is best fresh, but it really is a quick recipe to make on a busy morning.

Pumpkin Spiced Cottage Cheese Pancakes
I know what you’re thinking – there’s no way your kids are going to eat cottage cheese. But I promise, after you blend all the ingredients (I use my immersion blender to get it really smooth), you can’t even tell it’s there. Instead of a carb heavy breakfast of regular pancakes, the cottage cheese adds protein to make this a much more balanced meal.
Ingredients
- 1 1/2 cups cottage cheese
- 4 eggs
- 1 cup flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice

Directions
Blend all ingredients together. Cook on buttered griddle or skillet over low heat. Drizzle with maple syrup and enjoy! These pancakes take little longer to cook through than a typical pancake, but don’t set your heat too high or you’ll burn them.
Fluffy Egg Muffins
If you’ve been disappointed in egg muffins in the past, try this recipe! These eggs muffins are so delicious, fluffy and loaded with protein. Cooking them on a low temperature in a steamy oven keeps the eggs so soft. I always use an immersion blender to combine eggs, cottage cheese, and shredded cheese and they come out wonderful every time! You can add ham, maple sausage or seasonal veggies to really bump up the nutrition!
Ingredients
- 8 eggs
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- salt & pepper
- (optional) any seasonal vegetables or meats you want to include

- silicone muffin liners

directions
Place an oven safe baking dish on the bottom rack of your oven. Add in 1 cup of water. Preheat oven to 300 degrees. Combine all ingredients in a bowl and blend with an immersion blender. Grease a muffin pan or line with silicone baking molds (I prefer this method because they never stick!). Divide egg mixture evenly between muffin cups. Bake 25-30 minutes.
If you want to add extra protein or veggies, chop and cook them separately. Add a spoonful to each filled muffin cup before baking.
Spiced Dutch Baby with Cinnamon Apple Topping
This is one of our favorite breakfast items because you can make it sweet or savory. This version has all of the warm, cozy flavors that I crave during the cold weather months. You only need the most basic kitchen ingredients to make this come together. Top with spiced apples or maple syrup. This recipe doubles easily.
Ingredients
- 2 eggs
- 1/2 cup milk
- 1/2 cup flour
- 1 tsp cinnamon
- 2 tbsp butter
- pinch of salt

directions
Preheat oven to 450 degrees with a 10-inch cast iron skillet in it. While oven is preheating, blend all ingredients together. Once skillet it hot, carefully remove from oven. Remove hot skillet from oven (carefully!) and add butter to it to melt. Spread melted butter around skillet by tilting it side to side. Pour batter into hot skillet. Bake for 12 minutes. Top with cinnamon apples.

Peel and dice 1-2 apples. Add 1 tablespoon of butter and 1 tablespoon water to a skillet over low/medium heat. Allow butter to melt. Add apples, 1 tablespoon of brown sugar and a teaspoon of cinnamon. Stir to coat and cook until apples are softened.
